Nagoya is not the first city to come to mind when it comes to local dishes in Japan but that does not mean none exists; whilst most Japanese cuisine relies on simple, subtle tastes, Nagoya flavours are bold and brash. Perhaps the most obvious example of this would be the city’s love for red miso, instead of the more gentle white miso found in most other parts of the country. Yabaton takes their quest for decadent flavours even one step further by generously drizzling a thick red miso sauce over deep fried pork cutlets, which are then placed on top of a bowl of rice, a hearty meal by anyone’s standards. The queues that regularly form outside the chain’s main restaurant are a testament to just how popular this quintessential Nagoya dish is.
