Noodles are extremely popular in Japan, and every region has their own special variety you cannot get elsewhere. When it comes to Nagoya, those noodles are the kishimen, a rough-cut thick noodle reminiscent of udon that has been flattened out and crinkled along the edges. Kishiya serves its noodles in a variety of ways. The traditional fish broth is very popular, but the curry kishimen is even more popular.  A great place for these noodles in Kishiya, with its atmosphere that evokes a dark and personal affair, contrasted with a classic décor and a hushed atmosphere; a small window where your noodles appear gives you a glimpse into the bustling kitchen where everything is expertly made; a fun juxtaposition to the calm restaurant interior.
